I love salmon, but The Bob doesn’t. So I save fixing it for nights when he’s not home. But I don’t want to spend a lot of time in the kitchen when it’s hot, so I look for quick and easy recipes. Here’s one I put together the other night and thought it was so yummy I could hardly wait for lunch to roll around the next day for the leftovers.
Fiesta Salmon
1 cup prepared pico de gallo (I preferred NOT to use salsa, but a nice firm pico de gallo I bought at the store in the fresh produce section. The amount to use depends on how many servings you’re fixing – figure ¼ cup per serving.)
1/3 cup peach preserves (try orange marmalade if you don’t have the peach on hand)
3 tablespoons water
4 – 3 to 4 oz salmon fillets
Chopped fresh cilantro
Fresh spinach
Directions: In a small saucepan mix pico de gallo, peach preserves and water and heat just until warm.
Season the salmon the way you like it (I use pepper and thyme). Grill or pan fry on hot heat to sear the outsides and cook until it’s done. Serve on a bed of spinach with the salsa on top. Garnish with a dash or two of cilantro.
